Fudgy Brownie Mug Cake

INGREDIENTS

  • 3 tbsp Southern Belle Remix pancake mix
  • 2 tbsp unsweetened cocoa powder
  • 1 egg or flax egg (see below)
  • 2 tbsp vegetable oil or melted dairy-free butter
  • 2 tbsp maple syrup or sugar
  • 1 tbsp water
  • ½ tsp vanilla extract
  • 2 tbsp dairy-free chocolate chips
  • 1 pinch of salt

FLAX EGG (VEGAN SWAP FOR 1 EGG)

  • 1 tbsp ground flaxseed
  • 3 tbsp water

Stir together and wait 5 minutes until thick and gel-like. Use in place of 1 egg.

HOW TO MAKE IT

  1. Grab a big mug — Use a 12 oz or larger microwave-safe mug so it doesn't overflow.
  2. Mix dry ingredients — Add pancake mix, cocoa powder, and salt. Stir to combine.
  3. Add wet ingredients — Add egg, oil, maple syrup, water, and vanilla. Stir until smooth and glossy — scrape the bottom!
  4. Fold in chocolate chips — Stir in chocolate chips. Save a few to sprinkle on top!
  5. Microwave 50–70 seconds — Cook on HIGH. Edges should look set, center should look slightly wet — that's perfect!
  6. Wait 2 full minutes — Don't skip this! The brownie firms up into a fudgy texture as it rests.
  7. Top and enjoy! — Try dairy-free ice cream, a maple syrup drizzle, or powdered sugar. Eat right from the mug!

PRO TIPS

  • More oil = denser, fudgier brownie texture
  • Less water = thicker batter, like a real brownie
  • Slightly underdone when it stops = perfectly fudgy after resting
  • Salt makes the chocolate flavor really pop — don't skip it!
