Here are egg substitutes and pancake mixes in smaller batches:

Pancake Recipe Instructions

We usually use ground flaxseed as an egg substitute, but we created a list of options:

Egg Substitute Options

Choose one per egg:

  • Ground flaxseed: 1 Tbsp ground flaxseed + 3 Tbsp water per egg (let sit 5 minutes)
  • Chia seeds: 1 Tbsp chia seeds + 3 Tbsp water per egg (let sit 5 minutes)
  • Applesauce: ¼ cup unsweetened applesauce per egg
  • Mashed banana: ¼ cup mashed banana per egg
  • Aquafaba: 3 Tbsp aquafaba (chickpea liquid from a can) per egg
  • Silken tofu: ¼ cup blended silken tofu per egg
  • Commercial egg replacer: Follow package directions (Bob's Red Mill, etc.)

If you would like to make smaller batches of mix:

1/4 Batch: 3 oz pancake mix

  • ½ egg or egg substitute (choose one):
    • ½ Tbsp ground flaxseed + 1½ Tbsp water
  • 1 Tbsp oil or melted plant-based butter (plus more for cooking)
  • A pinch of apple cider vinegar
  • 3/8 cup water
  • Vanilla and/or cinnamon to taste

1/2 Batch: 6 oz pancake mix

  • 1 egg or egg substitute (choose one):
    • 1 Tbsp ground flaxseed + 3 Tbsp water
  • 2 Tbsp oil or melted plant-based butter (plus more for cooking)
  • 1/8 tsp apple cider vinegar
  • 3/4 cup water
  • Vanilla and/or cinnamon to taste

3/4 Batch: 9 oz pancake mix 

  • 1½ eggs or egg substitute (choose one):
    • 1½ Tbsp ground flaxseed + 4½ Tbsp water
  • 3 Tbsp oil or melted plant-based butter (plus more for cooking)
  • 1/4 tsp apple cider vinegar
  • 1¼ cups water
  • Vanilla and/or cinnamon to taste
