I'll be honest — I didn't plan for this to happen. I was frying chicken tenders and reached for my Southern Belle Remix Pancake Mix to build a quick wet batter. A few minutes later, those tenders came out of the deep fryer golden, craggy, and absolutely perfect. I made waffles from the same bag. Drizzled maple syrup over the whole plate. And just like that, a classic Southern meal was on the table — completely gluten-free, dairy-free, and soy-free.

The batter itself is simple — pancake mix, water, an egg, a splash of hot sauce, (optional: a dash of lemon juice for some zing) and your seasonings of choice. Whisk wet and dry separately, combine, and rest it 5 minutes while your fryer heats to 350°F. Here's the trick most people miss with wet-battered fried chicken in a deep fryer:
• Skip the basket. Wet batter sticks to mesh and tears apart. Use tongs instead.
• Hold each tender submerged for 2–3 seconds before releasing. This sets the batter so it doesn't sink to the bottom of the fryer.
• Fry in batches of 3–4 max. Overcrowding drops the oil temperature and gives you pale, greasy tenders instead of golden, crispy ones.
• Drain on a wire rack, not paper towels. Paper towels steam the bottom of the crust and destroy the crunch you just worked for.
The Recipe
For the Batter (7 tenders)
• 3/4 cup Southern Belle Remix Pancake Mix
• 1 large egg
• 1/2 cup water
• 2 tsp hot sauce (optional)
• Seasonings of your choice, to taste
• 7 chicken tenders
For the Waffles
• 1 cup Southern Belle Remix Pancake Mix
• 3/4 cup water
• 1 large egg
• 1 teaspoon Apple cider vinegar
• 1 teaspoon vanilla extract
• 2 tbsp neutral oil or melted vegan butter

Instructions
1. Preheat your deep fryer to 350°F. Pat chicken tenders completely dry with paper towels.
2. Whisk your pancake mix with seasonings in a medium bowl. In a separate bowl, whisk the egg, water, and hot sauce. Combine the two — the batter should coat the back of a spoon and drip off slowly.
3. Rest the batter 5 minutes while the fryer finishes heating.
4. Using tongs, dip each tender in batter, let excess drip off, and lower carefully into the oil. Hold submerged for 2–3 seconds before releasing.
5. Fry in batches of 3–4 for 4–5 minutes until deep golden brown and floating. Internal temp: 165°F. Drain on a wire rack.
6. Make your waffles using the remaining mix per your waffle iron instructions.
7. Plate the tenders over the waffles and finish with honey, hot honey, or maple syrup.
